👨🍳 Una Infancia entre Sabores y Tradición
En una pequeña cocina familiar del Lago de Como, un niño observaba con ojos curiosos cómo su nonna amasaba pan y preparaba pasta con la paciencia y el amor que solo las abuelas italianas conocen. Ese niño era Matteo Rapinese.
Matteo creció entendiendo que la cocina auténtica no empieza en la receta, sino en el ingrediente y en el tiempo: pan casero, pasta recién hecha, cenas familiares y reuniones donde él terminaba, inevitablemente, como anfitrión detrás de la estufa.
👨🍳 A Childhood of Flavor and Tradition
In a small family kitchen on Lake Como, a curious boy watched his nonna knead bread and shape pasta with the patience and love only Italian grandmothers seem to master. That boy was Matteo Rapinese.
Matteo grew up learning that authentic cooking begins before the recipe—with the ingredient and with time: homemade bread, fresh pasta, family dinners, and gatherings where he inevitably became the host in the kitchen.
✈️ Del Lago de Como al Caribe Mexicano
En 2001, Matteo emprendió un viaje por toda la República Mexicana. Ya de regreso, a punto de volver a Italia, recibió un correo de amigos de su natal Como que estaban en Mahahual. Le insistieron en que visitara este rincón del Caribe. Matteo aceptó… y nunca más quiso irse.
En 2003, decidió traer su avioneta a Mahahual y ofrecer vuelos privados y tours aéreos, compartiendo desde el cielo la belleza de la costa. Sin embargo, las dificultades técnicas y logísticas del mantenimiento lo obligaron a dejar de volar.
✈️ From Lake Como to the Mexican Caribbean
In 2001, Matteo traveled across Mexico. On his way back—ready to return to Italy—he got an email from friends from Como who were in Mahahual. They insisted he visit this corner of the Caribbean. Matteo said yes… and never wanted to leave.
In 2003, he brought his small plane to Mahahual and began offering private flights and aerial tours, sharing the coast’s beauty from above. Technical and logistical challenges eventually forced him to stop flying.
🍝 Nace La Cueva del Piloto: El Primer Sueño Gastronómico
Ese giro inesperado se convirtió en oportunidad. Matteo tomó su pasión más constante —la cocina— y abrió su primer restaurante: La Cueva del Piloto. Durante más de dos años y medio, conquistó a locales y viajeros con platos que respetaban la tradición italiana y aprovechaban ingredientes frescos de la región.
Así se formó una clientela fiel, de esas que reconocen en un bocado el sabor de casa… incluso a miles de kilómetros de Italia.
🍝 La Cueva del Piloto: The First Culinary Dream
That unexpected turn became an opportunity. Matteo leaned into his most constant passion—food—and opened his first restaurant: La Cueva del Piloto. For over two and a half years, he won over locals and travelers with dishes rooted in Italian tradition and powered by fresh regional ingredients.
A loyal following grew—people who can taste “home” in a bite, even thousands of miles from Italy.
🌪️ Resiliencia y Renacer: Del Huracán a The Roots
En 2007, el huracán Dean arrasó Mahahual y obligó a muchos —incluido Matteo— a comenzar desde cero. Pero como las raíces bien plantadas resisten cualquier tormenta, Matteo renació con un nuevo concepto: The Roots.

In 2007, Hurricane Dean hit Mahahual hard and forced many—Matteo included—to start over. But like well-planted roots that survive any storm, Matteo rebuilt with a new concept: The Roots.
The Roots is a tribute to Italian heritage with the Caribbean spirit in the background. Among the most celebrated highlights:
