👨🍳 Una Infancia entre Sabores y Tradición
Matteo proviene de una familia con una sólida herencia culinaria. Desde pequeño aprendió el valor de cocinar con ingredientes frescos, de amasar con las manos, de respetar el tiempo y la tradición. Su vida giraba en torno a la comida: pan casero, pasta recién hecha, cenas familiares y reuniones con amigos en las que él siempre era el anfitrión en la cocina.
Antes de dedicarse profesionalmente a la gastronomía, Matteo vivió otras pasiones: trabajó en la industria textil y, sorprendentemente, también fue piloto aviador, un oficio que años después le permitiría ver el Caribe desde el cielo.
✈️ Del Lago de Como al Caribe Mexicano
Fue en 2001 cuando Matteo emprendió un viaje por toda la República Mexicana. Ya de regreso, a punto de volver a Italia, recibió un correo de amigos de su natal Como que estaban en Mahahual. Le insistieron en que visitara este rincón del Caribe. Matteo aceptó… y nunca más quiso irse.
En 2003, decidió traer su avioneta a Mahahual y ofrecer vuelos privados y tours aéreos, compartiendo desde el cielo la belleza del Caribe. Sin embargo, las dificultades técnicas y logísticas del mantenimiento lo obligaron a dejar de volar.
🍝 Nace La Cueva del Piloto: El Primer Sueño Gastronómico
Ese fue el punto de inflexión. Aprovechando su pasión por la cocina, Matteo abrió su primer restaurante: La Cueva del Piloto. Durante más de dos años y medio, deleitó a locales y visitantes con platos que combinaban recetas tradicionales italianas e ingredientes frescos de la región. Poco a poco, formó una clientela fiel que reconocía en su comida el sabor de casa, incluso a miles de kilómetros de Italia.
🌪️ Resiliencia y Renacer: Del Huracán al Nacimiento de The Roots
En 2007, el huracán Dean arrasó Mahahual y obligó a todos sus habitantes, Matteo incluido, a comenzar desde cero. Pero como las raíces bien plantadas resisten cualquier tormenta, Matteo renació de las cenizas con un nuevo concepto: The Roots.
Este proyecto no solo rinde homenaje a sus raíces italianas, sino que las fusiona con el espíritu del Caribe. Desde entonces, The Roots ha conquistado los paladares más exigentes de Mahahual con:

That boy was Matteo Rapinese, and in that warm, flour-dusted space, a lifelong passion for food was born—one that would later carry him all the way to the heart of the Mexican Caribbean.
👨🍳 A Childhood Surrounded by Tradition and Flavor
Matteo comes from a family deeply rooted in culinary tradition. From a young age, he learned to cook with fresh ingredients, to knead by hand, and to respect the process and heritage of Italian cuisine. Food was at the center of everything: homemade bread, fresh pasta, family meals, and gatherings with friends—Matteo was always the one cooking.
Before dedicating himself fully to the culinary arts, Matteo explored other passions: he worked in the textile industry and, quite remarkably, also became a pilot, a profession that would one day allow him to admire the Caribbean from above.
✈️ From Lake Como to the Mexican Caribbean
In 2001, Matteo set off on a journey across Mexico. Just as he was preparing to return to Italy, he received an email from some friends from Como who were staying in Mahahual. They urged him to visit this hidden Caribbean gem. Matteo accepted the invitation—and never looked back.
In 2003, he brought his private plane to Mahahual and began offering scenic flights and private tours, giving visitors a unique aerial view of the region. However, technical challenges and difficulty sourcing spare parts eventually forced him to ground the aircraft.
🍝 The Birth of La Cueva del Piloto: His First Culinary Dream
That’s when a new door opened. Drawing from his love of food, Matteo launched his first restaurant: La Cueva del Piloto (“The Pilot’s Cave”). For more than two and a half years, he delighted locals and tourists alike with dishes that blended traditional Italian recipes and fresh, local ingredients. Word spread, and a loyal clientele formed—people who could taste the authenticity and heart in every bite.
🌪️ Resilience and Reinvention: From Hurricane to The Roots
In 2007, Hurricane Dean devastated Mahahual, forcing all its residents, including Matteo, to start over. But like any deep-rooted tree, Matteo stood firm and found the strength to grow again.
From that experience emerged The Roots, a project that pays homage to his Italian roots while embracing the spirit of the Caribbean. Since then, The Roots has been winning over even the most demanding palates in Mahahual with:
